The latest LTS version of one of these:
1. Kubuntu
2. Xubuntu
3. Ubuntu GNOME
The default Ubuntu has Unity Desktop which is pretty but doesn't get anything done.

Once you setup your environment you will compile new applications maybe once a month. You can run update over night. It's not that of a big deal.
You literally need maybe a day to set up a fresh gentoo install, clone it and make regular snapshots. Anything goes wrong you can always revert to an older backup. Pros: You know what went wrong. You have USE flags, portage is the best packet manager ever. It's blazing fast. It's secure. No systemd.
