why would they need to freeze the ram. its already running. they'll just wait until you get back and unlock it. or, they can just grab the encryption keys right from the memory

Information in RAM decays if it's not refreshed (this is the "dynamic" in DRAM), but that goes much slower at low temperatures. You hit the RAM with freeze spray, and they you can cut the power, take it out, put it in another machine, and read it. Including any keys or whatever that it may contain.
