Why is my Macbook Pro 13 (2011) slowly as shit? I remember it used to be very fast the first years but now it takes like half a minute to start a new app. Mutlitasking is impossible. Is it the hardware getting old?

Yes. You wind up with electron leak from the CPU. In layman's terms the calculation the CPU is performing gets "lost" and so it has to do it again, analogous to you pressing a key on a failing keyboard and it doing nothing so you have to hammer it again.
Since Apple CPUs are soldered you have no real option but to sell it on eBay and get a new one.

Try freeing up some space in your hard drive. I don't own a macbook, but getting rid of junk space hogs makes any system run faster.
I had a 2010 one for a long time, never encountered this. Even my 2007 17" MBP doesn't spontaneously slow down.

Swap out the hard drive for an SSD. Also Reinstall the OS from scratch, like windows. After 3-4 OS upgrades things start to get cluttered.
