How complex and/or difficult is it building and running a Hackintosh computer? Are talking Ubuntu simple or Arch complex? How stable is it?

Not difficult if you can follow instructions and edit a few files
As stable as the compatability of your hardware, which also heavily influences how difficult it is to setup. Just don't expect to run updates frequently.

Major updates, from 10.9 to 10.10. There are ways to update without breaking stuff, though updating conventionally will almost certainly break something.

If it's laptop wifi, then you'll have to try and find relevant files and hope you get lucky, there is absolutely no 100% compatible laptop for hackintosh because wifi cards are so poorly supported.
Why do people bother with hackintosh when most of the time stuffs don't even work.

I have i3-3110m with HD 4000. It's a cheap, HP laptop that isn't very known. (HP 2000-2c10DX to be exact; you can find the specs on Hp's website)
I can't really find anything about it on the hackintosh site that will help me install hackintosh to this laptop. I've tried googling but couldn't find anything and a video showed a laptop running hackintosh but all i got was a laptop running an intel core2duo.
