99.9% of all $600-1200 builds are identical, if you can't figure out if a cpu, mobo and ram are compatible (the ONLY compatibility issues you'll face) or how much power you'll need you probably shouldn't be building a pc because you can't do the 30 minutes of research it takes

In the end you know what you really want and what you'd be happy with. You most likely have a few things that you're going overkill on, that's generally the most common issue people make, but again you feel as though you really need that 6700k and not a 6700 and definitely not a 6600, right?
Just buy what you're happy with, those 200 bucks saved probably aren't worth you stressing over how you're getting 54FPS in your video game and it's all the fault of those damn internet fuckers you know it is.

I can guarantee you you're not making any kind of mistake (if those are old GPUs you're putting in, not buying them)
An i5 is always going to be fine for gaming, however of course you might find that an i7 can last you a little bit longer until it starts to become a bottleneck in the (far) future.
I would personally go for a non-k i5 and cheap non-gamer RAM and put that towards the GPU.

latest gen non-enthusiast intel cpu and waiting on latest gen gfx cards, what did you expect from this honestly
the i5 skylake will be fine for gaming and will last for years and is certainly better than anything amd has out currently (2500k is still fine for gaming, the first i5/i7s circa 2010 will still probably be fine outside of cpu intensive games)
pet peeve of mine but I like fully modular psus more because trying to remove a semi-modular psu from a case without taking out the mobo is a fucking nightmare
