They all are aware that they were once guys, but the wish makes them don't care about this little detail, probably because it makes easier for them to get with Carter. Also, Carter is also probably the only man than they would have any romantic interest.
You can check on other comics some clues regarding it, like Diana mocking Carter when he says that he can't wait to show his harem to Dylan, or when Ryana comments on how many girls she had sleep with. Ironially, the only one who doesn't have any idea is Carter.
On this serie, while the characters retain their memmories and mostly of their personalitty, the transfirmation makes them have the manneirims and preferences that they would have, if they were born as girls.
Chase for example tried to be the mold for the "all american boy". Because of that, his female counterpart follows a similar path that leads to a different destination, for example, she is less of a soccer player and more of a cheerleader. Of course some traces are still present, like the hot headness and the competitive spirit, aaaaand her ongoing rivalirity with Ryan.
I think that in order from most different, to most similar, it would be:
Chase/Chelsea, Ming/Mei, Dylan/Diana, Colin/Chloe, Ryan/Ryane.
But I also comtempled on how it would be changing this order...

Yes yes, I was thinking of that cap (and even that character, she's the perfect fit for it), I actually had the idea from ages before though. I was thinking, like, he watches some anime he liked as a guy, and although he still likes it now, he can't help but watch it through the same goggles any average fangirl would, thoughts of shipping creeps in (maybe even between his real life friends too) despite him trying to resist, searching for new genre tags on the sadpanda because the old ones aren't doing it for him, etc.
It's a bit of a different dynamic than liking guys outright or a total sexuality change (not that that couldn't happen too), but still has the whole "No wait this is so gay I'm a guy I can't think of other guys like that, shit man, no homo no homo" anxiety. It's also a niche interest/hobby that is almost exclusively done by females, so there's that association too, it's undeniably feminine, although not conventionally so since there's a bit of the "nerdy/gamer girl" type thing going on too. Him changing into a totally normal girl but also with that little 'fujo tweak' would be funny too, or any more female-owned fetish.

That is (in part) nostalgia talking, there was a lot of trash back in that day aswell, we just didn't get to see it or didn't look to closely at the shortcuts they took reusing animations.
The difference is that the high quality stuff (like Record of Lodoss War or Legend of the Galactic Heros for example) really shines through but also required insane amounts of money and manhours compared to what someone could do with a computer (but they just don't because it's become more and more and industry and less of a labour of love).
Ghibli until the very end managed to do outstanding visual spectacles despite switching to computer animation and the studio making Summer Wars, Wolf Children, etc has picked up their slack as Ghibli has died.

Here's the thing about being trans. If you see something that's too "realistic," a lot of people get scared away and go "Oh my, that sounds horrible. I guess I'd better repress these feelings forever." Sometimes it's easier to just read some Ranma and go "oh shit, I really want to be a girl," and then deal with the practical ramifications after the initial realization.
Of course, the problem is that sometimes the opposite thing happens. Sometimes people read Ranma and quite like the idea, but then refuse to accept any real-life compromise even if they'd be a lot happier that way.
