Y'see, Young Justice NEEDED to sell merchandise to cover the high production costs.
Steven Universe, on the other hand, has a much more managable budget outside of voice actor costs really.

The problem with older fanbases is that they buy stuff like DVDs, collectables and other similar stuff. Mattel was literally funding the animation costs because they wanted to sell toys, not that other shit. Older fans don't buy toys unless it's a HUGE property, like Star Wars or Transformers, so they had no reason to continue funding it. The fanbase of teenage girls just isn't something Mattel was equipped to market to (and the show wasn't huge enough to adjust their marketing strategies).
Steven Universe is funded directly by CN, so getting good ratings for the network is enough to keep it afloat (they get money from commercials and it builds brand identity).
