In the episode Jake tells Finn that although Finn sees NEPTR as a microwave it's not the only side of the robot he sees. When he thought deeper about it Son and Friend came to mind. Why he didn't change back when he did think of above.
The same thing can be said with Prubs too. To PB, he saw her as a "teenboy heart throb." Meaning at the moment she also thought about only one aspect of Finn's feelings towards her. Now, it could very well mean he sees her as a bro now who's attractive, or just a bro. But that's only ONE light he sees her in. Who knows what other feelings are festering within him? Maybe if he had those eyes more than one day, or if Prubs said things different to him, he could view differently like Jake turning into an old man (ex. The end of Breezy.)
