Flanderization is something of an inevitability for long running shows that have to maintain a status quo.
You can't do anything too major with your characters so you have to keep falling back on their most known traits to try and generate interest.
That being said Peridot is not a good example, they most recent episodes of the show have all focused on her character development to some degree, and she hasn't really become more quirky, just lost her tech and so stopped being a threat for the most part.

Peridot went from NOTHING in Warp Tour, to NOTHING(with some sarcasm) in the S1 finale, to being cocky as shit when she thinks she's in control, to desperate when not in control.
She is still desperate, she is not in control. Any time she thinks she does have control, she goes right back to being full of herself.
Nothing has been flanderized, in fact she's actually LOSING the only trait we know her for as she learns that she can't be in control and needs to figure something else out without being a bitch.
She needs to be on the winning side of a conflict, but right now she needs to make compromises to do that, and it's making her rethink everything she knew now that everything isn't so sterile and streamlined as a job as a Gem Technician of sorts.Unless she has some sort of plan, but I really, really doubt she'll come up with anything ahead of time. She'll just pick YD's side when she shows up, because Peridot is desperate to be on the winning side.

I feel like they were kind of getting close to the point where they'd start to replay the Crystal Gem interactions too much until Peridot came along.
Introducing new characters or switching up the dynamic slightly can really help with that shit while still keeping some of the status quo at least.

Based on Scot Tennorman, arguably he was "Homerized" where the writers took extrapolated an extension of the character's personality that wasn't there from the beginning for comedy purposes but then became the only note the character had. Homer had an exaggerated neglectful jerk personality in "Homer's Enemy" to contrast with Frank Grimes which later writers kept using anyway.
Like before "Old Man and the Lisa" Mr burns was a ruthless oligarch, but afterwards he was the butt of senile old man jokes because that episode introduced the low hanging fruit of that personality trait.

Everyone from It's Always Sunny qualifies but in my opinion, it's one of the few times where not only it makes the show better but also sort of made sense. Everyone on the show slowly becomes worse throughout the seasons and I saw it as the Gang slowly becoming more insane and desperate as they get older.

Most characters who are not the main focus start off with just one or two notable traits about them.
A character is flanderized when those traits become the entirety of their personality as they get more screen time.
A character is developed when we learn about them and their personality becomes more complex.
