Luke never uses his blade in combat, either, which seems something unlikely to happen if they'd made ANH in this day and age. I suspect it was purely a limitation in budget and effects technology. Star Wars was a risky proposition when before it opened and became a heavy hitter at the box office.
Oh and in case it comes up, I'm not saying that Luke would have dueled Vader but I do think he would have at least deflected Stormtrooper shots which is actually the only lesson we know that Obi-Wan gave him. It's odd in retrospect that Luke would receive his father's weapon, wave it around a bit, piss around with a remote, and then never pick it up again the rest of the movie.

Good for a Star Wars show?
I think so. It ain't The Clone Wars levels of blow-your-dick-off incredible where you feel it deserves an Oscar, that's for sure, but it's of no fault of its own. The first season for slapped with Y-7 (why.jpg), but now it's finally at PG, so the writers that're new are getting their sea-legs in terms of freedom and what to do with the narrative. Not sure how many writers carried over from TCW. At its best it's better than many early TCW episodes of that helps, but more boring at its worst, but that'll vary from person to person of course.
Good on its own?
More or less, feels like it wants to be more than it is, but also like it's not sure how much more it wants to be either. It's one of those cases where it's not so bad you can point to a few things that're terrible, nor is it good enough to be able to point at a few things that're fucking amazing. It's good, not great.
It's getting better as time goes on. Last 1/3 of season one was 10/10.

Bad. PT-era economy was a capitalist wet dream at the expense of political stability. Megacorporations policed their own slices of the galaxy, keeping everything tied up in a bureaucratic, stagnant mess where the only excitement in the galaxy was the occasional pirate raid or terrorist plot.
OT-era economy was a fascist's wet dream, as the only independent companies that existed were either outlaws from the Empire, and therefore broke until Endor happened, or on the Empire's payroll, which meant everything had to be weapons technology. All production was geared towards the Imperial war machine, and everything else in the galaxy suffered at the expense of weapons manufacturing. Unless you were one of the rare manufacturers to go Rebel, which ultimately payed off into whatever the ST will show us happened in the next 30 years.

Logically, it shouldn't be too different from the old EU, just with hopefully fewer alien empires from wild space and beyond swooping in to fuck with the New Republic just because people are bored with the Empire for the nth time.
A lot of the political shit in old canon was very plausible. Sheev's lack of infrastructure leads to the Rebels quickly building an equal power base to the fracturing Imperial Remnant. Warlordism ensues, with the occasional attempt at unification from the most powerful Imperials still left. Many Imperials will join the growing New Republic over time, changing their ways. It's possible that this time, there won't be enough Imperial remnants to make the kind of peace Palleon made with the NR, and that the Empire might just get wiped out completely, but beyond that I agree it'll be interesting to see what they try for the ST-era.

Something about the ST's aesthetic, the content of Aftermath, and the apparent absence of the New Republic in the ST suggests to me that the galaxy may have regressed to a sort of feudalism.

I think it's already been said that the Empire has basically retreated to the Core and Inner Rim while the New Republic owns most of the Mid and Outer Rim Territories. The First Order have been likened to Nazis that fled to Argentina to continue scheming, and in fact we know that Hux (Domnhall Gleeson's character) is related to an Imperial officer who proposes basically training kids from birth to be loyal soldiers to the Empire (circa the time that Rebels is happening).
And Aftermath has them showing that Moffs and military leaders are basically doing the same thing they'd done in Legends, some disappearing with all their resources, some joining the New Republic, some going full Space North Korea (see Uprising for example).

From what it seems, the First Order are possibly coming out of the Unknown Regions (see the recent "canon map" with Rakata Prime and the location of Starkiller Base) or way out in Wild Space. Aftermath also has one of Palpatine's flunkies mention something about Sheev looking for the source of the dark side out beyond the reaches of known space, and has an Imperial Remnant faction out there as well that Rae Sloane answers to. After Jakku the Empire signed a treaty that limited their actions to just the Core and Inner Rim.

To be fair, it's more apparent in TCW. In the movies he has a few fencing moves but for the most part he's fighting in a pretty standard style. A lot of characters choreographed by Nick Gillard follow that pattern, where they have a few unique traits but their styles are still mostly just fighting in Gillard style.

That said, he is also practical--that high-friction grip and easy access pommel show that. If I had to, I'd peg him as a jack-of-all trades Jedi. Decent force abilities, decent saber skills, decent investigative and diplomatic abilities. The Mario to the collective Jedi Order's Smash Brothers roster. He'd only distinguish himself from the other Knights if a crisis arose when he was nearby, but the laws of storytelling dictate that such an event take place.
The next saber belongs to a big brute of a Sith, someone for whom defeat in battle is as inconceivable as suddenly turning into a rancor. His ferocious strength, enormous size, and sheer malevolence make him a formidable foe, even for a Jedi Master.
The third is 100% an Imperial Knight. Pensive and careful, she makes a valuable adviser to the Emperor. Her incredible deftness of strategic thought make her a formidable opponent in a lightsaber duel, although her connection to the Force is decidedly middle-of-the-pack.

Another one I like, but I'm a sucker for Katarn-style hilts. Hmm, this is a tough one to pin down. A Jedi Knight from the time before the Clone Wars, I think. A Human, and one at that who has a tendency to push limits. His saber controls allow for precise definition of the blade for the task at hand, and the grip is the long, comfortable style of someone who is at home on a battlefield.
