San Francisco has a fucking shit ton of culinary culture, due the massive number of people who came in the early to late 1800s: Italian immigrants, Chinese immigrants, and immigrants from all over due to the gold rush. In 1848, the population of San Francisco increased from 1,000 to 25,000, which is huge for that time period. And most of those people stayed. Whatever major Mexican influence was present in SF left in 1821 when Mexico gained it's independence from Spain, and the missions in the western US all fell into abandonment and disrepair. THAT is why "mission style" mexican food fucking sucks. The Mexican left and went back to Mexico after Independence, and with the Gold Rush and Railroad Expansion, it was wiped out by Italians, Portuguese, Chinese, and many more. SF's Chinatown was the largest chinese settlement outside of Asia back in the 1800s.

Blame the hippeis, and more recently the techies. As a port city SF had a great food culture. Early adopter of Chinese and other Asian cuisines. Legit Mexican neighborhoods. Immigrant culture should make it a great food town.
What happened is that the hippie thing cared more about the ideas behind food than the food itself. Hippies prioritize shit like vegetarian/vegan, fair trade, organic, gluten-free, cruelty free and shit like that. They care whether the business they support also support progressive causes and foster an LGBTQ+ positive environment. By the time they've checked all that off their little lists they're out of energy to determine whether or not the food actually tastes good.
Then there are the techies. They just want something fancier than what they'd buy for themselves delivered to their workplace on the company dine. They don't give a fuck if it's overpriced mediocrity because they're no paying for it.
So you have a city with the base of a great food culture undermined by too much concern over the politics of food and too many people with too much money and too little discriminating taste.
