So my theory is based on the assumption that pudding is in fact the three eyed girl previously seen with Big Mom.
Now, I do believe Pudding is tricking the SH, but this isn't my theory.
My theory lies with her actual powers. We all know that Oda likes to use historical figures and mythology when creating characters. So, to me it seems possible that Pudding's third eye is based off of the chakra third eye.
Third eyes have been seen throughout mythology and they always symbolize someone with clairvoyance or seeing the truth in things(pretty much enlightenment).
Anyway, Big Mom's subordinates seem to know so much about the world, who people are, and their history. This is seen with Sanji's past and even with the way Big Mom deals with people that oppose her. (Attacking people close to you)
I think this is Pudding's main use to Big Mom. I think she has some type of clairvoyance and feeds Big Mom with information about what's going on in the world.
If she hasn't actually met Sanji, like many people are anticipating, it would explain how she was able to describe him. Not just by his wanted poster, but his personality, and his love for cooking.

That's because the Yonkous have entire fleets and armies of their own. While Luffy's capable of big things and his crew can fight strong opponents, he doesn't yet have the sheer manpower to actually, say, wage a whole war and heavily dent the government.

I see here that a lot of people seem to think that she didn't really talk to Sanji, that the fact that his face wasn't visible in that flashback is suspicious. But the hypothesis seems to be that she's just making the whole thing up, using his wanted poster as a description, the eyebrows, the 'heart-shaped eyes.'
I've got an alternative hypothesis, as you can see. But it's crazy. Why would he be there? Why would he be posing as Sanji, and saying he wouldn't marry her? But the thought just won't leave me...
I never thought there was going to be romance in this manga but you can pretty tell Nami is into Sanji this whole chapter.
