The first season is a pretty straightforward magical girl show, the fanservice aspect doesn't really get rolling until the second season. Even then the second season still has some pretty great fights.
Keep in mind a lot of the fanservice is invented or played up by the anime. If you're really uninterested in the SoL/fanservice aspect you can skip Herz entirely and just pick up the manga where 2wei's anime left off.
3rei, the third series of the manga, is where shit gets real. Its anime will start airing July 6th.

Whether or not something is "dark" is determined the seriousness of the subject, tone, or conflict that the story uses.
Tsukihime is inherently dark, as its central theme is death.
3rei is significantly darker than the previous series due to the conflict shifting from monster-of-the-week and fairly minor personal drama to a much more complex conflict with actual developed antagonists in control of a very bleak setting.
Something "edgy" is an element added to the story with the intent to provoke a reaction from the audience.
Edgy is not inherently bad and can be an extremely effective way of capturing the audience's interest, but it is often done badly by inexperienced/poor writers who try to force edgy elements into a story to take advantage of this possibility, to appeal to their personal taste regardless of how it fits with the existing story, or to pander to groups who the edgy content appeals to.
A positive example of edgy would beMami being eaten alivein Episode 3 of Madoka. Unexpected but naturally fitting in the context of the situation and narrative as a whole, and created a memorable scene introducing the tone shift from that point onward.
A negative example would be Sakura's abuse in Heaven's Feel. It's handled very distastefully, like the narrative is exploiting it for forced drama, sympathy, and fanservice all at once.
