This is the cockpit of NASA's ER-2 high altitude research aircraft. It is an older setup, but I think it looks better. Cutting through the center of the glare shield is the scope for the downward-pointed optical telescope
Here is the cockpit for the Soyuz. It is a simulator, but sadly I can't find any good photos of one in space. Still really cool in my opinion
