The way the edges look and the aliasing seem very awkward. Are you actually doing this in a vectoring program with the pen tool? All the hair points are dull and rounded, and should be sharp points as well.

Except it looks weirder than that. Many areas look like they were drawn with a different kind of tool. The pen tool in vectoring programs is very basic; all the lines are made with strokes and fills, and are completely filled. Yet in the image, there are many lines that don't look like fills or strokes. Many of the lines have chunks eaten out in the middle for no reason, like on the ear, shoulders, and neck. It isn't simply layers overriding others either, as I know what that would look like with proper strokes or fills. This looks like some kind of attempt of doing it from another program like GIMP, PS, or Paint.NET.

Those random stroke lines look pretty bad. If you are going to add that many lines, you might as well add all of them with proper filled lines and make a proper vector. Otherwise, there isn't much point of adding lines since minimalism vectors tend to have very little or none at all. Also, export the image at a much higher quality, such as 300 or 600 PPI/DPI.

Hate doing the work, or hate the look? I find the latter hard to believe. Tends to be an excuse for laziness 99% of the time. If you are going to use the lines, make them more noticeable. The line color is way too close to the color of the jacket to be relevant. Honestly, using the shadows to show parts of an image does a much better job than lineart when making a minimalist vector, in my opinion.
Also, the banding on the jacket isn't the greatest. Whenever you use gradients on large objects, it tends to make it more apparent. I think it looked better with the flat shadows and coloring from before.

There are a lot of pointed edges that could be smoothed, and you should be making the eyes with the ellipse/circle tool instead of doing it manually. Some of the claws also look pretty poor. I would need to see the original to give a better critique of what is lacking/different from the original.

I figured. Doing filled lineart makes images take a very long time.
I don't personally like minimalism images, so I don't bother doing them or trying to get them to work. However, like I said before, I prefer just the solid colors and shadows, with maybe some minimal lines (fills of course). I've done it once before and felt most comfortable doing it that way. I don't really like using gradients on large objects since the banding is pretty bad. This change is no exception from the previous. The requester will probably be satisfied either way, so do whatever you like.

Most of the hair is pretty bad when in comparison to the original. Emphasize curving the tips of the hair in a direction instead of having them be flat and stick out. This requires using the handles at the V tips more than the others.

Here's my first attempt at doing minimalism, how'd I do? I just started learning illustrator so I'm kinda meh with the pen tool.

The hair is pretty bad. You have very poor bangs at the front, multiple areas of color peeking, and odd layering causing many areas to look awkward (by her arm and the hairties). Some areas I don't even know what you did, like the entire tie, and both arms. It is almost like you went crazy with the nodes and just added a bunch of them. You also forgot to set your artboard to cutoff the bottom parts for her legs. The aliasing is also pretty terrible. Make sure you are exporting with Type Optimized (Hinted) and not Art Optimized (Supersampling).
Here are some things to take away from this:
1) Minimize nodes, maximize handles. You do not need nearly as many nodes as you have. You need to take your handles to their limits before even thinking about adding extra nodes. Do not underestimate how far they can go.
2) For all hair tips, emphasize sharpening the tips, and always have the hair going in some direction. Some of the bangs are crudely drawn at the tips, or are drawn flat out. You don't want that.
3) Use layering to your advantage. You have color peeking everywhere, and very awkward layering that doesn't properly connect. Use a system where there is always a fill under another. This removes color peeking and awkward layering issues. If you come to a situation where you need a color to merge right on top of another, use the Shape Builder tool emphasized in the tutorial in the OP, or use Smart Guides to take advantage of snapping.
If you post the original, I could also show you a few examples if you want.

You have color peeking (the color below showing) everywhere. Change the background color to neon green and you'll see there's green in between her hair and face, and between her chest and uniform. Also, check the ear, where the shadow is not connecting with the hair.
Eyes are awkward when minimized, so they are usually left out (as you can see in every post here). If you insist in leaving them, at least differentiate them from the eyelashes and paint them the proper color. Also, add the other facial features like eyelids, nose and mouth.
And there's a 3 pixel transparent line at the bottom, don't know why. You should remove it.
Someone can minimalize this? (if it's possible keeping the eyes) I dont care if it's not super accurate (the clothes seems very hard to minimalize).

When I first started doing these I had some weird aspect ratios and such as well. I would recommend not putting any shapes outside the artboard: when you click near the edge it locks on. If you do have things going outside, I'd use the "Use artboards" check box on the first save-as window, as it will crop everything extra out.

A lot of the lineart in the original is pretty messy/bumpy. Don't try to copy it 100%, because it will look bad as a vector. Smooth out the small little bumps and only keep the ones that emphasize curves.

Not sure what exactly what you mean. The tips are drawn, but they don't curve very well, especially on the right side of the bangs where you use rounded edges that looked really bad. You need to make all the tips sharp, and they need to curve in a similar direction so that it looks like the hair is flowing and not static.

Choose a basis for each shape large shape. Make one be the highest layer that the rest will go under, or vice versa. This will help immensely.

It can mean that. If you have a layer overlapping another that shouldn't be there, that color could be "peeking" over the other, like the hair on her left arm that should be under the arm. However, it can also mean areas of an image where the shape is not fully colored, and that when put on a transparent background, the transparency will peek through "holes" that should be filled with a color. You have a couple areas in the hair and arm that are like that. This is why you always put a high contrast color (usually green or red) as the background so you can easily see the peeking and fix it before posting.

Circles are easy - there are circle tools in both inkscape and Illustrator.
Also: you can make a "two-node" circle (I never count the connecting node) by just making sure your handles are parallel to one another, and are the same distance apart. Usually the handles are each between about the diameter of the circle away from each other, to the radius, depending on the tool.
Usually I give this as a practice to those peopel having issues learning line nodes: Draw one of these circles, at every 45 degrees to help them understand the tool better.
ANd yes, when I say this, I mean at 180, start from the bottom and go to the top - I know the degrees overlap after a certain point, but learning this way makes you think about the curve better.

You should also readjust the headband. It is pretty easy to tell from the left side that the handles are not even which is causing flatness. Many of the hair shadows could also bend more properly at the tips.

Update to the latest beta version. That usually fixes the random export bugs that Inkscape has.
The headband is too flat at the corners. It means you are extending the handles farther out then they can handle. Most likely your upper and lower handles are uneven in order to try and compensate as well. In order to fix it, extend the handles at the 4 corners outwards enough (keeping them even and parallel) so that they still curve at the beginning. Then add two nodes in the middle to handle that part. Adjust the end point handles for consistency and that should do it.

Not the OR, but not too bad. Some of the hair could be better at the tips, and the lineart has some inconsistencies with thickness at the belly button and the line above it. The biggest problem is the banding is pretty bad. I am on my good monitor that usually hides banding, but it is still visible. You can probably get away with it on the body (although it is more noticeable on the stomach), but the background is definitely incredibly obvious. Either add noise in Photoshop, or choose better colors/reduce the distance between the colors in order to reduce the banding.
