I love diddy kong racing.
This game still stands up extremely well to this day. I still play 2 player sessions with my mate and it gets real intense.

DKR. The beginning is much easier, didn't lose a single race for ages on my first try but the different racing formats and pretty shitty power ups make it way more difficult after a while, and beating the bosses can be quite tough.
Could never beat Greenwood Village, admittedly I gave up rather easily though.
MK64 is a piece of piss in comparison.
