I don't think I'd actually want to manage several arcade cabinets. From what I've read, it's not difficult to put together multi-game cabinets, especially if you go the route of emulation.
That said, I'd like to have just one cocktail-style cabinet. As for the games, I'd probably rig some kind of PlayChoice-10 / NES emulation and have the selection consist of:

Pretty much this. I was there last week, and it's awesome. A lot of the cabinets have some shitty monitors, but that place is gold. Worth it to take a vacation there. 500+ games. a shitty 65$ a night hotel across the street, and a decent beer bar that has pinball tournaments 2 blocks away. It's retro nirvana. Plus, if you get a high score, an attendant will enter it into Aurcade's ranking system.

I can't understand people who want cabinets for games that can easily be played with arcade accuracy at home, and for just the price of an arcade stick. Just seems like a waste of space. Arcades should be about experiences that aren't feasible in the home.

Sunset Riders is more of a run and gun type game like Contra or Metal Slug, but it's presented in a style that's very similar to Konami's beat em ups like X-men and Simpsons. I think people just associate it with those games.
