I really hope we either get confirmation that Ash's story is wrapping up or Serena somehow manages to stick around.
They can wrap up Ash's story in specials similar to the Mega Evolution specials that show him battling Elite 4 characters and maybe closure for Giovanni/TR since they don't have time to finish that before S/M comes out.

Even if Ash's story wrapped up I don't think that'll ever get resolved, so far the only encounter between Ash and Giovanni was very lackluster(yet another strike against BW) and pretty much ended up in nothing and not sure what would be a good end for it anyway, unlike pretty much everything else.

I like the idea of Ash going to Alola to be the Champ there and have to set up the gyms from scratch. He still has "gym battles" so to speak where he defeats the super trainers to get them to hop on-board battle-wise and be the gym leaders for his region.

I'd definitely expect some final confrontation with Giovanni is the show wraps up. Jessie/James/Meowth won't get any closure unless the organization is disbanded, and they'll have a reason to stop following Ash.
Likewise if the writers deemed Giovanni irrelevant we would have seen TR disbanded by the end of Johto, or during the end of BW even. All the other villain teams are axed entirely.

I think the customization feature returning in the games is a great incentive for Serena to stick around, since all they have to do is give her another new design.
Also as said, what can a new female do at this point? If Contests don't return the new female would just be around to do nothing...yet again. And unlike Serena who had her crush and then the tripokalon's it would again be seeing a new girl doing nothing for hundreds of episodes.
The writers have run out of things for the female lead to do, and Gamefreak also isn't smart enough to create any new sidequest that had the same impact as Contests did. In fact I'm willing to bet Contests won't be in Sun/Moon at all.
