Because why reverting back? Gen VI was incredibly thigh both theme, design and idea wise for its starter trio, and it proved a good thing because GEN VI starters are probably the most loved behind the original. Going back to the old way they make starters would be dumb.
Granted that this trio is really weird, derpy and yoakiesque (and before you jump on me is both true and a good thing, this starter trio is really really good) so maybe they've changed direction. After all this should be the first generation after the youkai boom.

In gen4 all starters ended up strong against both other starters. Fire/Fight strong against grass and steel, grass/ground strong against water and fire, water by itself strong against ground and fire. The difference with 4 is end evolutions did away with the triangle, but if the seal ends up water/ice, both starters will be strong against grass/flying, and the owl won't get any strength against the rest.

Don't mean to single you out, you were just the first post I saw when this thought came to mind.
We didn't get our first starter lineup that all had secondary typings until Gen4 with Grass/Ground, Water/Steel, Fire/Fighting. I don't think it's safe to assume that every trio we get is gonna have to abide by some balancing act with their secondaries. While it might seem like that's the only "fair" way to do it, that hasn't always been the case.personally, i hope it doesn't always work out that way. It would get too restricting as to what they could make the starters be

To balance things out and still make sense of things:
Rowlet: grass/flying > grass/flying > grass/psychic
Litten: fire > fire > fire/poison
Popplio: water > water > water/fairy
fire < water poison > fairy
psychic > poison
grass > water
Fire is going to end up being the most powerful of the three in terms of typing with poison as secondary. So probably things will be balanced with abilities. Fire/dark is still viable but it will prbly fuck up the triangles.
