Coffee is my pick as it can play the role of either ambiguously brown or just Tan in this Hawaii based region, as we see from the game it looks like there's gonna be brown all over the place and Coffee is the girl who most looks like the New Pokemom.
Chocolate MIGHT happen especially if they are trying to convey a message of diversity. This could be their way of saying "SEE we allow everyone" which honestly isn't a bad thing. Also she's the shiny new color, the "newest" of the new girls as we have never seen that shade before and they might want to push that after having not done so with brown Serena (Probably because Iris was the girl before her).
So yeah, my money is on Coffee but wouldn't be surprised at all if they went with Chocolate.
