If you have good understanding of grammar you can get by (assuming you don't intend to speak it) without knowing much kanji because you can look it up and plug it into the sentence. Problem is the grammar rules are hard to understand because they're so different. Kanji isn't hard so much as it's just tedious and repetitive.

There are about 2500 kanji that are considered by the government to be the bare minimum you have to understand to be able to read the language without reaching for a dictionary every sentence (the specific example is being able to read a newspaper). There are thousands more kanji than that though and you wouldn't be able to read novels or anything just on those 2500. Knowing lots of kanji is considered the same as having a large vocab/knowing big words in English, it makes you look smart

Honestly unless it's a super common Kanji there's only going to be like one or two readings, one for compound words, one used when it's on its own. Maybe you have one or two more for verbs, like one for a transitive verb and one for intransitive verb.
