are there brackets when invading? I did some 3 hour invasions and I was paired up with lone host or a host with a buddy. After that it's all 4v1s. Was I just lucky for the first few invasions? Also changed from red to purple, if that has anything to do with it.

DS3 actually has totally viable bow combat, and not only that it spices PvE up quite a bit due to stagger mechanics allowing you to keep (most) enemies at range, and the Composite Bow's rollshot adding more flexibility to close combat. Yeah some bosses will take a *lot* of arrows to kill, but it does change up how you handle a lot of the game.
I recommend Composite Bow, Pharis' Bow, and Onislayer for a run. Just do a quality build like you normally would, but you can skimp a bit on END (and VIT, obviously) and put those points into support casting.

I think the type of playstyle I wanted is like a ranger playstyle, like how Aragorn fights in LoTR. Longsword, shortsword backup, and a dagger for emergency backup.

Poison arrows work the same in both games. You poison them then go make a sandwich, because you are going to be there awhile. It DaS1, they are really good for dealing with the AL Archers, and in DaS2, they are really good for dealing with the fire Lizards. Other than that, it is usually just quicker to kill shit outright.

Help me pick which spear to use, /dsg/.
I've just gotten up to Aldrich and I feel like I need to pick a weapon to use instead of this raw Astora Straight Sword. I'm mainly just doing PVE stuff at the moment (first playthrough) so I'm more PVE focused if that helps.

Swordspear is a Dex/Faith weapon that has a 1H spear moveset and 2H Halberd moveset on the R1's, its R2's are the other way around. Pretty neato
Flamespear is a Pyro weapon, one of, if not the, best spear(s) in the game
Flamespear is closest to where tou are now, DSpear and SwordSpear are end-game
Is great combustion ever preferable to black flame in ds1? BF seems to be doing more damage and more stamina and poise damage

I found that most of the time, in PvP, GC did more damage. So I would use GC for damage and BF for stagger or guard crushes. Also, attuning both meant I didn't have to go even deeper into NG+ cycles to get more casts. I usually ran two of each.

Up until now, I've been using base knight stats except with 27 VIG, 24 END, 10 INT and 12 FTH so I could use the raw ASS along with Carthus Flame Arc, but I'm realising the ASS is probably going to start paling in comparison to weapons with scaling at this point in the game.
I have about 500k souls ready to allocate wherever though.
I like weapons that are reasonably fast so I can roll away if need be and won't get caught mid-swing by an enemy attacking me, so straight swords have been fun so far, but I also like the idea of being able to attack reasonably quick and have some range too, so spears sound like a good idea. I'm going to need at least 18 STR to use the Shield of Want (because free extra souls).
I've heard a lot about the Estoc but I'm not sure how great that is for PVE, or if a rapier would be better.

Carthus Cheese Sword gets his health down very quickly, but the charge kills me every time. i can't think of anything but roll spam. is there a better way to do it without a shield?
this is on NG+5. in previous NG cycles he just never opened with the charge in my successful attempts - i can try again and again and wait for an attempt like that, but i want to actually learn how to deal with it. i watched other sl1 fights and it's either a fight with a shield or without charge openings and nobody even tries to anticipate them by rolling or even moving to the side

Estoc even post nerf is a good weapon, spear-wise i think the Lothric Knight Longspear is pretty good, and so is the LK straight sword; all 3 are buffable for flame arc use.
