Any response you get to this question is going to be full of people posturing to act like playing every class at 100% is easier than breathing, people shilling for whatever their main is, and people who have been playing a single class every day for 2-3 years and think that it's easy because every nuance to it has become second-nature to them.
That said, I think that Dragoon, Black Mage, Bard, and any variety of healer have the most to offer in terms of challenging you to push yourself if you want to get really good at them.
Dragoon is based around a short-duration timed buff that you need to maintain, while also consuming ten seconds of the buff every time you use a particular skill, and learning to play it smoothly without dropping that buff requires a lot of familiarity with the class, the specific fight you're doing, and what the pitfalls are in any given situation.
Black Mage can basically deal the highest damage in the game, but only if they're standing stock still the entire time. They have a huge number of tools that can be used to minimize their own downtime, but they're all situational and you need to know how the encounter plays out before you can use them effectively.
Bard has a ludicrous number of buffs and off-GCD attacks, to the point where there really isn't such a thing as a perfectly-efficient Bard. Every few seconds, you're going to have to make choices about whether to delay your GCD-based attacks or whether to hang on to an off-GCD attack, and you have to do that while dodging/moving for mechanics, while most of your attacks have cast bars that require you to stand stationary, all while you manage your suite of buffs, and keep an eye on the rest of the party to see when/whether you need to play support songs.
The healing role, in general, carries a certain level of complexity that's mostly lacking in any other, because you have two very distinct jobs: Healing, and dealing damage, and you need to know when/how to do both of them.

This is wrong. I find MCH to be completely boring in comparison to BRD. The job feels very rigid and mechanical when it comes to optimizing DPS, compared to BRD at least.
