They may be an adventurer in a fantastic world with wholly different motivations and personalities than your own, generally that you have developed in the process if playing and in the fluff. What you described is indeed the definition of roleplaying, but that doesn't apply in this case. It's all a matter of whether you can disconnect yourself from the characters you create or not. You can create, flesh out characters, and have them interact with each other and their environment through writing or other media without meddling, and if you really care about what "role" you have, you can simply call yourself "God". Yes, fiction authors do roleplaying with their characters--unless they want those characters to be flat. That seems pretty simple to me. A role-playing game is just a cooperative way of storytelling, after all. When you play a role-playing game, you think in all the ways I imagine fiction authors do, and vice-versa: what is the character's motivations, how would they act given the context, and so on.
Now, no one said anything about being personally involved. Going back to the tabletop games, you generally don't put yourself as yourself into the game.

It can be very limited, like with some role-playing video games, where the extent of the role-playing is in customizing the character's equipment and perhaps a few dialogue choices, to thinks like tabletop RPGs and freeform RPGs where extensive latitude is given to the players within the rules of the setting. I'm using tabletop RPGs as an example to emphasize the storytelling, character-building aspects of what role-playing can be.

It's true that you need to get into a character's head in order to flesh out their personality, that's obvious, but that in itself doesn't make it roleplaying. You're broadening the term way too much. It becomes roleplay when said character becomes your avatar, an alternate persona.

The issue with roleplaying is only when it matches the negative stereotypes, like when it gets intensely personal or too wrapped up in its own lore that it loses its accessibility to other people. Of course the second would require that the RP itself be intended for outside viewers to understand, which I assume is true for MCC, since intros are public.
Might also be an issue of bad storytelling, where the characters clearly exist only to boots the author's ego. I don't think this is much of a factor because I'm sure most people playing this game are doing so to boost their egos at least in part. Probably another issue of degree of intensity, I guess.
