There is an absurd amount of extra dialogue depending not only on getting them drunk, though also on what you serve them or how many times you get their drink wrong etc.
You're probably better off reading the script directly. If you just want the drunk dialogue of the characters, here you go:Sei can get drunk on Day 1. She talks about Jack, the leader of a Blitzkreig Corps who wears a flamboyant outfit, has a cape and rainbow visor.
Dorothy can get drunk on Day 2. She talks about her lewd ventures in a school girl outfit, being ravaged by a middle-school teacher. On Day 9 she talks about her Mega-Santa gangbang.
Stella can get drunk Day 3, though her sprite doesn't actually change. She loses her cool and is rather upset at Sei for going to the bank the following day, though in a drunk worried way.
Alma can get drunk Day 3 where they talk about sexuality, hexadecimals and Alma definitely not being drunk. On Day 5 she talks about her dominatrix adventures with Dorothy.
Jill can get drunk Day 6 during that cozy time with Dana. If you get completely wasted and trigger the meat rod dialogue, it'll affect the next days conversation with Dana. Just get super wasted immediately, you might trigger the vacation dialogue or mechanical arm dialogue if not.
Betty can get drunk Day 4. It also affects the dialogue on their next visit. On Day 18.
Sometimes just giving them big Fringe Weaver's won't always work, since you get their orders wrong they might not ask for more (see Sei for example).
That's not a comprehensive list, since I went into the script and merely found the places I remembered and looked for ".drunk" sprite changes to see where they'd get drunk, but not all sprites have such, so some will be missing. I also excluded Streaming-chan since I thought that was obvious.

ZTD is the 3rd game in a series, so there's a higher barrier to entry.
ZTD has actual puzzles, this game has glorified busywork (not that it's a bad thing), so ZTD requires more effort to play.
Uchikoshi (the writer of the Zero Escape series) has been writing the same 2/3 stories slightly modified and using the same literary devices/twists since the late 90s. People who know him aren't interested in what he has to offer, since he's all about the twists.

How do you get Kira*Miki drunk? The only soft drinks you can serve her require 1 alcohol so I served her a large. Then when she asked for something bitter I gave her a large version of the suplex I think which has 8 alcohol but she didn't get drunk.
I'm trying to get her ending which apparently needs you to give her the mulan tea which I did and then to get her drunk.

Considering that there is no "skip seen" button like most other VNs, it's a bit bothersome to replay. There is tons of branching dialogue, though... so purely on that, it has replay value. It's probably better to just read the script directly, though.
Different drinks certainly do give different outcomes. Makes them potentially drunk, changes amount of pay, their dialogue, your endings, potentially getting game over, elicit different behavior.
Rum is from serving Stella perfectly. Absinthe is if you do not. Each has their own usage, so to experience all the content you will need to serve customers improperly at times.

Lots of different dialogues based on how you serve people. Right and "wrong" drinks, amount of karmotrine (mostly "client is drunk as fuck or not", no middle ground), using bottled drinks, etc.
Getting distracted by not buying things for Jill and not paying bills also have some extra dialogues (mostly Jill talking to herself instead of giving you tips of what the client really wants, except for the "bad" ending for not paying the last bill).

Welp i just finished the prologue (already 100% the main game) and i was simletainously satisifed because it was centered around Betty and Deal both of whom are close to my favorite chracters.

I've spent pretty much the entire day trying to get this game to work, and I finally got it working. For those interested:
The reason the game wouldn't run is because it's 32-bit. Gentoo is, usually, a 64-bit OS. This isn't normally a problem, as most of the time the program is 64-bit or you have the 32-bit libraries. The 32-bit library missing is libopenal, so you need a way to install it. This can be done in several ways, but the easiest way I could find was installing emul-linux-x86-sdl which, among others, contains that library. Unfortunately that package is no longer in the main portage repository, though it is still available from some overlays. This package requires another package that no longer exists, as it was moved to a different category. To get around that you can install the latest version, and then install emul-linux-x86-sdl with the --nodeps flag.
In short, to get the game running on Gentoo:
