If you're eating right, hard mode won't give you that much of a challenge either. Later on, there could be a few bosses that'll be a bit difficult with certain characters but thats about it. It's definitely more fun on hard though since enemies are a bit more aggressive and have more health.

The majority, but not all, of them are skippable, but a fair portion of them add to the world, story, setting and characters. Many of them have unique dialogue between the characters and do a fair bit of character building.
I did all of them (except for a single one I missed by accident) because I really wanted all those bits of extra story and setting, but ultimately it's up to you.
I'd recommend at least doing some of the notable ones like the lighthouse lady ones, as they really do give a bit more to the setting and characters.

Are you interested in it? The way you worded the question makes it sound like you aren't.
Like Nier, it's appeal comes from its characters, music and story, but that doesn't necessarily mean that liking Nier will mean you'll like D3 as the tone of the story, the characters and the gameplay design is all quite different. Nier is definitely the more palatable of the two as well.
Personally I loved it for its story and characters (especially Zero and Mikhail), the decent combat (basically an okay linear action game when the frame rate isn't shitting itself) and the music, but many people were understandably turned off by its obtuse storytelling (Zero's motives aren't explained until very late and why she's such an asshole isn't explained in game, it's in the novella), significant frame rate issues and other problems.
Finish Nier, and if you want something different, but with Taro's brand of despair, and are willing to let some notable issues slide, then give it a try. I love it, but it's also a game that's hard to recommend without disclaimers (all Taro games are, with Nier being the most palatable) of the bunch.
Don't feel the need to play Drakengard just to enjoy Nier Automata. Every game in the series except D1<>D2 are distantly connected and any references are simply there to be appreciated by existing fans and unnoticed by new ones.

I can still play stuff like Fatal Frame 1 and 2D side scrollers and have tons of fun, but Nier was just bad in terms of gameplay.
And it's hard to ignore this aspect of it which actually makes it a game, so you can enjoy the story and whatnot.
I had the same problem with the Witcher 3 initially, but I wanted to like it and kept going for a few more hours. Then it became more tolerable and I managed to enjoy it. I just couldn't get past 10 hours in Nier though.
