it has to do with chocobos being treated as full on party members (ie, taking one of the eight full slots) rather than being simply a summoned entity (like an egi, faerie, or autoturret). this may also be because of the fact that they accrue experience points

Game is still very new player friendly. Thread is a bit poop sometimes but you should be able to get answers to your questions.
I would just get the base game until you're sure you'll like it (you can play the base game until 50 without missing out on anything unless you want to be Au Ra). Unless you have money to blow or are really that interested, in which case you can spring for heavensward right away.
CE of the base game and HW just give you extra cosmetics. You can upgrade to them any time through mog station if they have something you decide you really want.

Cactuar is not a terrible server, but Balmung is personally one of the best I've ever been on. Really friendly people, good RP, kind of sucks content wise from what I've heard.

I think it should have been something like the hunt quests in MH. Lists of missions you can do. Some of them are just gathering or freestyle, some are just track down and kill this very difficult boss monster/s before the time limit.
Guaranteed drops on mats from those monsters (but some mild RNG for what kind it would be, but still important) to make gear that's BiS. If you have enough mats, you can exchange them to an NPC and get the gear but crafters can make HQ versions of them probably so crafters have more relevance. So here the difficulty is mostly on killing the monster and not the grinding I guess.
