Aside from the roll attack change, the only halfway good suggestion is the vit change, and that could be done better by changing armor. Your solution would just make everyone carry a fuckload of weapons or go for full blown poisetank since you thought making the wolf ring a multiplier was a good idea.
Here's what actually needs to be done to solve most the games problems (aside from fixing rolls):
Add your poise value to each flat defense.
The reason why heavy armor is unviable is because absorption per unit of weight is significantly lower compared to lighter armor, and because absorption gets scaled down more as you stack more on. However, in most cases they can compete in terms of poise per unit of weight. Even if they are less efficient, they don't sink as quickly in terms of poise as they do in terms of absorption. This also makes it less comparable to health %increases since you're using armor for something other than absorption.
Making heavy armor valuable increases the value of equipload, meaning you don't have to do anything to it.
More people having vit and gaining defense from heavy armor hurts light weapons in PvP more than heavy weapons in PvP, since the damage reduction per hit doesn't scale with the damage of the strike the same way adding absorption does. Furthermore, this doesn't damage PvE balance at all as long as you increase the enemy damage proportionally.
Overall this hurts meta weapons/helps heavy ones, increases the value of unused armor/decreases the value of unused armor, and doesn't fuck with PvE since a controlled increase in the players average defense can be matched by a controlled increase in enemy damage.

Bows and crossbow with "special" bolts/arrows are literally inferior to their physical counterparts. Lighting Dragonslayer arrow is complete trash, having infusions on bow would greatly increase those special ammo use.
The greathammers do need a damage buff, they are absolute compared to other ultras, which are shit themselves due to slowness

DS3 is the worst game in the series.
All the bosses are knights, there are no variations. Makes the game a chore to finish. I finally forced myseld to finish and the last boss was a joke. His first form was predictable as fuck and his second form, I shit you not they stole the exact moveset from the last boss in DS1. Move for move. Could they get any lazier?
I don't like how they tried to make it like bloodborne.

The Abyss is an open pvp zone with unique rules.
There's no friendly summoning, no invasion cooldown timer and you can be invaded by multiple phantoms simultaneously. However, invaders can kill one another in your world to still earn their reward, instead of targeting the host, and the reward only goes to the invader that lands the killing blow. The mobs are also hostile to invaders. It's basically a proto-moundmaker covenant.
And yes, it's purpose-built to fuck your effigies because you can amass effigies through successful multiplayer. It essentially serves as an effigy dump so that successful invaders/prolofic co-opers have somewhere to actually use the enormous stacks they collect, as well as gate that pushes bad players to go off and co-op or invade so they can pay the entrance fee to the multiplayer VIP lounge.

Most new players heavily invest into a stat. A spread between Vig+end+your main damaging stat, favouring more the first and last, works best. Most don't realise upgrades matter more than levels, if you lose the souls to level two or three times but manage to buy enough to upgrade your weapon once, it's a good trade.
Remember to make sensible investments into items. Bows/crossbows, bombs and resins all add big advantages and options.

The AR is just inflated because it lists all the damage types
The right blade deals the physical AR + the magic AR
The left blade deals the physical + the fire AR
Despite listing all 3 in the stats page, no single hit ever uses all 3. After the patch that buffed every paired weapon's L1 modifiers, they typically deal ~300 damage per L1, which is hitting well above their speed and weight class. Against people dumb enough to use the prisoner's chain, that goes up to 400+ per L1.
The only people who complain about them are the idiots that tried to split their offensive stats 4 ways without realizing the magic and fire damage scale with str and dex.

All these little changes that they "reverted" from Dark Souls 2 weren't conscious decisions. They had to choose between using the BB Engine or the DaS2 Engine, and they went with the BB one, and all the otherwise inexplicable differences are because of that.
The thing is, had they gone ahead and used the DaS2 engine, I'm sure there's more than enough that would've been worthy of complaint from it. We'd probably still only be able to run for half a second before running out of stamina, or we'd have DaS2's extended recovery frames, or we'd have the shitty online interactions like 1frame katana running attacks and spinning.
It was going to be shit either way, and presumably at least the BB Engine had Sony's people touch it up instead of From's own programming team.

It's more punishing because you have to sacrifice estus for FP, and since all your spells take from the same pool, rather than individual casts per spells, more variety of spells is harder to sustain.

In my opinion the trading of HP estus for FP estus is reasonable, as I found sorcerers to have an overabundance of estus in DS1 and DS2.
The removal of limited casts also allows pyromancy to function as a primary damage source, which was extremely hard to maintain in DS1 and DS2.
You do make a good point about it making a wider variety of spells harder to maintain, and I can't think of a solution while maintain FP.

I felt like the level of callback in this game was pretty controlled compared to DS2. And bringing back Gwyn I think was particularly important to do because the will of that character has run through the entire series; he was the first to link the fire, creating the very idea of linking the fire, and his will to keep the flame alight has persisted all the way through the ages to the events of DS3. If the Soul of Cinder is supposed to represent all the warriors and heroes who have gone before the player in this game and be a link back to the beginning of time (and the beginning of the series/story), it seems totally appropriate to call back to that original hero most strongly.

DS3 had little choice in the matter since it was made as a definitive last installment to the series. It wouldn't have made much sense to throw out a shitload of totally new ideas just to have them all go relatively unexplored due to there not being a next game.
A useful comparison is to the Indiana Jones trilogy. Raiders of the Lost Ark establishes what Indiana Jones is about, and in The Last Crusade most elements of the original are brought back in a larger way. It follows closely the same formula as the first, but it was because of that similarity to the first entry that it felt like a good sending-off last entry for the series as a whole. That's why everybody liked it despite it just being kind of the same thing over again.And then Lucas fucking ruined it by making more movies.
The best time to try out wacky shit in a trilogy is actually in the second, middle installment. Temple of Doom tries out new stuff while still being an adventure movie, and while not everyone liked it, it didn't matter because there was a final installment still coming to tie up all those loose ends, get back to the roots and make everyone happy with the series again. The widespread feeling is clearly that DS2 failed in this respect.
That's why there might seem to be undue anger with DS2's numerous callbacks and undue satisfaction with DS3's numerous callbacks; if it's the last game, people want it to honor the memories of the games that have gone before rather than trying to strike out on its own. If it's the second game and they know there's more to come, that's the time when they are most open to seeing something new and experimental. So it's true that the games are being held to different standards, but it's perfectly sensible and natural to do so.
And if you want a Souls games that tries new shit, Bloodborne came out very recently and is absolutely that, which it was free to be because it's a new franchise.

It sounds like you think that's too few even though that was the hardest boss I fought, and I literally won at the very end with 0 estus, like 1 life left, and the killing shot was the last of my stamina after 4 swings. No shield, no parry item, no nothing. Irithyll SS 2H because I thought it looked cool with the particle fx, blind playthrough. That's why I got that feeling, because it was so extremely, I mean EXTREMELY close. Literally every resource (not FP but I didn't even know about using the weapon arts at that point) completely exhausted to the literal absolute maximum.
Also I avoided parrying entirely and blocking is for scrubs. I just got gud at rolling through my first playthrough. That's why I beat the nameless king in one try. My older brother, who played all of the souls games (even demons) before me, it took him almost 50 tries to win with a greataxe. He WATCHED ME beat NK on the FIRST TRY with the Lothric Knight Long Spear, 2H (a weapon I ended up using through the majority of my playthrough because lol longest reach of pikes description), SL80 with 4 estus left over in the end even. He was so fucking mad it was hilarious.
tl;dr git gud at rolling timings. It is, in all honesty, the most important skill in the game. Especially if you can avoid panic rolling in PvP. The second most important is parrying but only if you do invasions (better be low level, nigga, at least half meta level). The second most important if you only do duels, like me, is anti-parrying techniques. Try using a 2H lothric knight long spear in SL120 duels and you'll soon learn how important this is, it's probably the single best weapon for learning how to play around parrying because everyone will try to parry you and the running and rolling R1's are garbage.

I'd like to see you play. I haven't had much trouble against last bosses either, killed NK in two tries and final boss in 3 or 4 I think. However abyss watchers pushed my shit beyond redemption. To be honest all the bosses in this game are much easier depending on how much health and estus you have, while doing my first playthrough in ds3 (until abyss watchers) I was restricting myself to make the game a little more challenging. I'd advise you to do the same if you want the thrill of a hard fight.

Greataxes are the fastest and the highest damage ultra weapons. The balancing factor to this is that their movesets are limited and lack versatility.
On the complete opposite end of the spectrum are UGS. UGS are slow and they lack damage compared to all other ultra weapons, but instead they have extremely versatile movesets with a full complement of slashes, sweeps, thrusts and slams.
The idea was that Greataxes are ideal for straightforward slam blam do damage kill things, but that their lack of horizontal sweeps or usable running attacks would limit them. UGS do less damage, but have the full arrange of tools for most situations.

Yeah, information changes everything. Like I pointed out, I later discovered that I fought the AW underleveled and otherwise was still a noob at the game. I beat them at the literal limit of what you could beat them at, exhausting literally all resources and praying I didn't get hit in the meantime, and it worked. That's why it felt so damn good when it worked out on the 8th try.
Seeing me play now probably wouldn't benefit you, in the sense that I've since clocked in over 300 hours in the game and mostly do SL120 pontiff duels with every weapon. The NK first try win while my experienced souls brother watched was damn satisfying though, he was pissed off seriously for at least a week and a half after, constantly saying shit like "well I guess it's not a problem for YOU, seeing as YOU beat bosses everyone else has a PROBLEM with!" and shit. Felt great.
Honestly just git gud at rolls, at least with DaS3 that's the best advice I can give. I just happened to do that naturally. Now I'm far past the "noob" stage though so seeing me play probably wouldn't benefit you, but I could see about recording some low quality webms if you want.

I know that feel. I can finish the game no problem but i dont think ill ever be able to do max ng+ or level 1 runs, its depressing
How come there are so many plebs running around summoning multiple phantoms to beat fun and challenging bosses like Sullyvahn?
It helps me farm some easy souls to buy armor and shiet, but I just don't understand why people run away from the charm of beating a hard boss solo. Beating aldritch and sully solo gave me DS1 nostalgia.
Even 1 phantom feels too cheesy as you can just back up and sippy whenever.
