Basically make backup saves and if some cheater comes in you just pull the plug and start over. It's still incredibly rare for hackers to show up, and even if there were no hackers backup saves are incredibly useful (PvP at different levels, invade without caring about recollecting souls, infinite reuse slabs and respecs, etc) so there's no reason not to.

They're extremely weak to bleed. I'm pretty sure a single L1 from the Warden's Twinblades will bleed them out. If you don't have any bleed weapons, purchase some Carthus Rouge from the Handmaiden and slather it on your fastest weapon. Other than that, don't get too greedy. The beasts practically never stop attacking. Even the fastest weapons can barely get a hit or two in before it bites again.

Whoever said Lifehunt Scythe was buffed is a filthy liar. It's still just as slow and awful as ever. Takes almost two full seconds to swing at 40 dex, has fuckall range and zero hitbox. Even at level 1 the bosses are easy. Thats te shitty thing about this game. Getting hit at all takes a fuck-ton of your health regardless. And with Raw weapons you can shit damage at low levels.
