This is what Topanga does and it absolutely 100% unarguably is the superior format. Sets are way longer, so it gives you a clearer picture of who the better player is, and they don't let nobodies in to clog up the brackets.
Open tournaments are still okay to let nobodies make a name for themselves if they're good, but Topanga style is vastly superior.

That's the case for every competitive genre, if you don't actually know about it you will not realize the meaning behind certain choices and plays and stuff. But at least in fighting games (at least SF) it's easy to understand who is winning and who is losing and basic stuff.
As someone who only ever played less than 10 matches of dota 2 in his life, whenever I watch a moba match I LITERALLY have no idea of what's happening. Heroes are so small and the screen is so cluttered with stuff that when some team fight happens I have no idea who hit who and who is winning and stuff, as well as completely counter intuitive mechanics like courirers and killing random weird mobs and a million other things that only make sense if you actually play the game. In a fighting game you may not get why someone used st. MP instead of st. HP, but if one dude is beating the shit out of the other and the second's guy life is vanishing that's pretty easy to understand.
The thing is just that mobas have a gorillion more players and thus viewers.

Mobas only require you to memorize ~5 moves per character, and it's very easy for streamers to call out their effects on the fly (IE: "Lina got them with her stun"). Meanwhile in fighting games you have many more moves per character with individual properties, faster and less distinct animations, and the terrible spectator mechanic that is comboing. (Not saying combos are worse than some mechanics in other genres or anything, just that it doesn't help things.) The pace usually also makes commentary much more difficult.
Granted spectator friendliness is only half the issue. If you can get an audience then people will go through the effort of learning just about anything to enjoy spectating it. The true problem is that fighting games are still inaccessible as fuck to the general market.
I will never understand why fighting games aren't more popular.

Every individual moba game practically has its own difficulty curve, whereas fighting games are almost at full intensity from the very beginning ("almost" being merely because of empty meters at the start) and only 90 seconds long.

Thats the expectation with every other genre and it works. I can go buy COD or Halo or whatever and feel good that I accomplished something online immediately. At the very least I'll get some nice kills, there's experience points and progression, etc
Mentally I am being satisfied by playing the game without investing too much outside of the natural aspect of just playing the game
With fighting games though that's impossible. Right off the bat you need to lose enough to understand the basic concept of what is safe and what isn't. You need to lose to understand where and how to control space so its in your advantage. You need to spend time practicing combos which has ZERO reward -- its literally just work training your muscle memory.
Then you need to go online and lose and lose and lose and lose and maybe eke out a win. That's not worth it for most people. Most people don't want to invest that much time into something. Fighting games will never be played by the mainstream (though with the right marketing it might be *watched* by the mainstream)
I think the Rising Thunder devs had the right idea to casualize a time taking and monotonous part of fighting games to try and address the time sink problem.

Fighting games as a genre is fine, the problem is that fighting game accessibility is horrible by today's standard. The devs have already started to catch onto that though, and are trying to correct it. (see: Revelator's very thorough tutorials and new lobby system.)
They'll eventually be able to take a proper share of the competitive multiplayer market once they finally iron things out.
