Yes, he can die (as long as you don't start the quest before the attack), when you replay the mission just find him, you will see it and then go back to the cemetery and you will see Vivienne mourning.
All in all, she did care for him, us just that when she had the curse she was more worried about that and probably that he would think her a monster, and when you do the egg thing, she is more worried about trying to squish the most out seven years of life, than to fall in love and marry someone just to die so soon.
So the best ending is where they transfer the curse since they travel the world together and she still seem willing to leave him if things go south but is giving him a chance.
