Well the thing is, eyes can't see the other side of the nose. Eyes are designed to not be able to look any more to the left or the right than what the structure of the head enables them to see. The eye on the left can look more left than the eye on the right. Who would have thought?
But yeah, 100% left or right is only useful for side-shots where you only see the one eye.

"Better" is subjective and not really valid since morrowind mods don't have consistent visual quality, one good mod would look different than another of equal quality.
