I think something like psyche locks is useful for avoiding the typical "but you didn't find my three specific contradictions hidden behind these presses!" complaint you get with testimonies. Start from the end and work backwards. Think about a murder case where you could have multiple "true" culprits and possibilities, then work back to an extremely simplistic cause and motive (workplace murder because employee was tired of being shafted by their boss, domestic dispute that turned ugly, whatever). Include vague enough evidence that it can be used flexibly for different theories, and throw in a couple of variety pieces of evidence that don't exactly tie to the defendant to give the witnesses something to work with.
As long as you keep the "real" possibilities in mind while writing evidence and remember that a witness could go in those directions (or even in a completely unplanned direction), you should be fine. But you need to make sure to enable those kinds of possibilities and give the witnesses a good foundation for their testimonies instead of creating a too-tight case against the defendant and expecting the witnesses to fix it. Too often I've seen cases where it's not clear what possible options or motives there could be besides the defendant's, meaning there's nowhere to go but a guilty.
