Tactics
There might be perfect attacks or perfect defenses, but there are always ways around it in the end. She can't attack while inside of Avalon, she has to come out at some point. There are already some strategies with that fact alone.
Say you have an invisible silent killer NP in the area, the second she gets out she's dead. Also you can hover homing swords so that the second she gets out of Avalon she's stabbed to death.
There's a dozen ways to think around this ability, an entire point in Fate is that there's no perfect ability. The entire reason she didn't just cast Avalon at the start of the match with Gilgamesh is because she's smart. Rather than chancing shit and giving him a chance to eventually maybe find a counter, she instead used Avalon in a moment when he couldn't counter it that left him open.
Tactics beats anything, if she had Avalon all the time she'd just be another Gilgamesh to overcome.
