The only difference between those works are the GRAIL systems, which are just magic machines. Roman even uses the Fuyuki Grail as reference when mentioning how the Chaldea FATE system differs. The different workings of the Mooncell, FATE, Fuyuki Grail etc are irrelevant because they all exist within the same grander set of rules.

I think canon is a completely artificial concept that we're mapping onto Type-Moon for no good reason other than that most Western nerd shit obsesses over it, but Kuro projecting Excalibur while in Illya's has some justification in the description of Illya's magic in HA, where she explains that she can skip processes and intermediate steps and go right to results by virtue of being part of a wish machine. Kuro repeats this explanation when she explains how she did what she did in that scene.
Also there's the Excalibur Replica inside UBW in Extra, which is weaker, but doesn't kill him.
