There's a set way that OV pieces drop. First of all, certain monsters only drop certain set pieces. Look up a set in the DFOpedia to see what Monster drops what.
Second of all, every time you run it picks between your Subclass and 20 randomly chosen subclasses to drop a Chronicle Item for. Running OV with party members will reduce the amount of randomly chosen subclasses by 1 per party member. In a full party it picks between your Subclass and 17 other randomly chosen subclasses that aren't your party member's subclasses. For example, if you're an Asura and you party with an Elementalist you won't get any Elementalist set piece drops.

3 more are reserved for your partymembers (unless you're not in a full party)
16 are randomly chosen
drops are instanced, droppools are not
if there is a witch in your party, you will never see any witch pieces drop for example (many people for some reason say otherwise but they are full of shit)
now for the drops itself
every boss has a chance for a "drop" and a fragment (or more sometimes)
this "drop" can either be
1) Int fragment
2) basic chronicle
3) set piece
every specific set piece only drops from one specific enemy, as stated in the dfopedia
the less partymembers you have, the more fragments will be dropped as those are shared
if you have a full party in OV3, the boss will drop two items instead of one
