I don't know your level of proficiency, but maybe Duolingo might help you out? And trying to have as much possible contact with the language, grow used to how it sounds. Learning a couple of key-expressions is also useful, the basic ones that people use more often. And you can learn to communicate fairly efficiently with basic verbs (modalverben are a must), and it's useful to speak to yourself sometimes, saying basic things like Das ist ein schönes Fenster, or whatever is in front of you. It's like being a baby all over again, but it's kinda fun.
I don't know if that works proper when you're trying to create a german basis all by yourself, though, I was lucky enough to have plenty of time to learn it. But, that's what I'm doing with latin, and I've been making progress. Slow progress, but progress nevertheless.

Playing as the Otomo is pretty rought in Shogun 2. The self sufficiency tech tree is nice, but it's so harsh having to face clan after clan, every time you beat one another declares war. And you have to nearly pay out the ass just to get on near friendly terms with anyone.

It's a cavalry-heavy game, it's suppose to be like that. This is the age of plate-armored knights, mongol hordes, muslim mamelukes, etc. Cavalry dominated the late-medieval era. Braced heavy spears and heavy infantry like dismounted knights are very good and can take a charge, and crossbows cut down cavalry.
Personally, I love it. With real recruitment on it's hard to spam heavy cav anyway, that's my experience as the crusader states anyway. You get a heavy cav from one of the buildings like every 20 turns, I think at turn 40 I had maybe 6-8-not counting the bodyguards-from having multiple buildings, you have to decide whether or not to use that recruitment for retraining or getting a new unit, I usually opt for the retraining so I have a bunch of gold knights.

it's not really a custom battles mod familia, it's meant to be a good campaign experience, and the cavalry is balanced out by being very hard to spam (very slow recruitment times) and very expensive unless you store them in castles. Obviously they're going to seem very overpowered just from playing custom battles.

High-tier spears will win if they're braced-bodyguards will still probably fuck you up.
Just get used to immediately supporting your spearmen with your own cav and you can save them, early-game just realize that your spears are basically expendable anvils that are inevitably going to take some nasty charges while protecting your missile units and artillery. They're cheap and recruit-able everywhere, whereas a knight of jerusalem is going to take 10 casualties killing your shitty spear unit and he can't retrain for another 20 turns. See how that works? You have to play smart with your cav, they're precious gems to be saved and babied.

You forget that in Charlemagne, AI are much more willing to sue for peace than in the previous instalments. Sack a town, make peace with them, then sack the towns of their allies, then make peace with them as well. etc.

Since you're better off just charging out with cav since the AI doesn't know better and will let you kill their troops that way. Alternatively just open a gate on the opposite side and their army will try to rush there. Rinse and repeat.

problem with early is that there is very little unit variety. and you'll be using mostly the same troops for most of the game since when you reach later armor and units you'll have conquered much of the world.
I like early starts for that roleplaying feel though

I played Genoa (Because I fucking love crossbows and genoese crossbowmen will be hype as fuck) for some time but because I don't expand I'm kinda caught. To the North and East is the Empire, to the West is France and I'm on friendly terms with both. To the South is Rome and I definitely ain't attacking the Papacy and the fucking Moors keep raiding my island towns so I have to keep my main army there. I've only got one military castle so can only pump out Spearmen/Light Men At Arms/Peseant Crossbowmen/Mailed Knights once every four turns so replenish my army is a fucking bitch. I don't have the military power and barely have the economic power to take let alone hold lands in the Middle East or Africa.
Not sure what to do.

I can't hold lands that far away, I just don't have the power and trying to do so will devastate my economy. If I could send my main army perhaps but it's stuck babysitting the islands against the fucking Moors.
Maybe I should start a new campaign, porbably as Genoa again but be a bit more aggressive against rebel/indie settlements early on so I can get more lands. Any tips for getting strong armies early on? My main problem then was gathering forces to actually take the indie/rebel towns. I mean, all I can recruit is shitty militia spearmen.
Also, is it better to have one military settlement and the rest economy early? Or 50/50?

hard to say. at least 40% castles I'd say. depends on were you're expanding. but once you're in a serious war you'll need them so badly to resuply your armies.
I usually secure one front and have that as my economic part. Problem with Italy is theres not that many castels mainly cities. but Genoa and Venice get great militia troops aswell so don't worry too much about having too many cities
