So I bought the PC version of this game. I spent about half an hour to get the controls set up exactly like I wanted due to it not being compatible with the controller I had. Everything seems fine, and then I walk onto the second screen and this.

I had no FF7 synergy for sephiroth (best I had is the XIV dagger for him) and I just didn't use him for retaliate. Threw cloud in with the gold sword and had him retaliate. No advance, just used boost and sephiroth/reno/aerith all hit with double hit/cut. Same thing for +++ but subbed cloud for gilgamesh and used reta/drawfire it was easier than the ++

Nah, with some exceptions, FFs are not related to each other.
Since you've been playing with Cloud, try out VII. If you like it, there are other VII games in English like Crisis Core (ARPG on PSP) & Dirge of Cerberus (3PS on PS2). There's also a movie sequel to VII which is also a prequel to Dirge called Advent Children.
After that, there's a wealth of FFs that it'd be best to pick and choose and see what seems fun to you.

Wait, what? FFXV and VIIR are built on different engines: XV is using SE's proprietary Luminous engine built by their BD2 section, while VIIR is UE4. Their tech is quite different.
As for your first point, your reservations are understandable, but keep in mind that VIIR is not just VII: it covers the Compilation too. It's a much bigger game than the original in many ways.
