People freak the fuck out because Crit and Det are now worth like 0.15 of a main stat instead of 0.3 (even though you're getting twice as many of each on every piece of gear so there's no practical difference). Assize restoring percentage-based MP isn't some secret WHM master gamechanging mechanic.
Natural MP regeneration is already based on a percentage. Over the course of three minutes, you'll regenerate 120% of your MP pool. Assize increases that from 120% to 140%. It's nice, but it's not where your MP is coming from.

Mana is more important than ever in alex. The stat itself has gone down minimally but the importance has gone up, which balances it out.

There is no fight in this game where you can intentionally not go oom if you try. Limiting your piety is just limiting your DPS/Healing/Raising capabilities for minor increases in crit/det. You only lose 2% crit rate for going main stat piety compared to main stat crit.

Piety so that you can cast more DPS spells is great - IF the limiting factor on how much DPS you can push is how much MP you have, and not how many GCDs you have where it's actually safe for you to drop into Cleric Stance and DPS instead of healing.
The problem is, it is frequently not the case that you are limited by MP. If you're solo-healing a fight, especially when you're undergeared, then playing an effective WHM essentially means mapping out the entire fight script, GCD by GCD, and figuring out exactly what's going to happen to who, and when, and devising a routine that lets you cover all of the damage - you can only DPS when there's a window of 5 or more seconds where you don't need to be healing, which often means that your DPS needs to be dealt in a specific X GCDs where you're actually free.
(Obviously you get more freedom and your routine gets less strict as you and the rest of your party get stronger gear, so as you begin to overgear a fight you will naturally tend toward being Piety-limited, but it's not the case during progression where it matters most.)
Generally speaking, the bottleneck to healer DPS in A1S and A3S (other than Digititis) tends to be the number of GCDs where you're free to DPS, which means that Crit/Det/SpS will help you out more, and the bottleneck to healer DPS in A2S and A4S tends to be MP, in which case Piety stomps all over the others.

The thing about getting locked into GCDs is that not only does mana increase the amount of DPS you can do, but also the amount of healing you can do. You are able to throw out extra med2/cure2/adlos just due to the amount of extra mana you have, which in turn increases your healing. 2 cure 2s is equal to 3 cure 1s, which effectively saves you a gcd every time.

That's true; Piety can be used as a makeshift boost to potency by spending extra MP on more powerful spells. But the frequency with which you can do that based on Piety is not necessarily much different from the increase in effectiveness you get from the other stats.
Just to pull some semi-reasonable napkin math numbers out of the air:
100 Piety will give you roughly 650 more max MP, which means that you'll gain an extra 260 MP every minute through natural regeneration, and an extra 65 MP every 90s through Assize. So over a three-minute period, you get 910 extra MP (you also get the initial 650, but that's a one-time bonus so its usefulness depends on the length of the fight).
To turn Piety into potency, let's say that you free up an extra GCD by casting a Cure II instead of a Cure, and then you throw in an extra Stone III. 442 MP going from Cure to Cure II, 530 MP casting Stone = 972 MP. So you're at a slight overall loss by doing it that way.
Now compare that to an extra 100 Determination. That's going to be the equivalent of somewhere in the area of 14-16 Mind, which is in the ballpark of 1.5 points of Weapon Damage. Not only is that a (small but) noticeable boost to your overall healing/damage, but it's conceivable that over the course of three minutes, that increase in power could result in adding up to a GCD where you no longer have to cast Cure (+442 MP) which gives you time to lob a Stone 3 (-530 MP), for fairly similar results to what you gained via Piety.
Don't get me wrong, Piety is a really nice secondary stat to go for. The liquidity of the MP is really nice, and it leaves you with a lot of on-demand versatility relative to the other stats. But it's not necessarily not the ONLY good choice, and the overall effectiveness of the other stats is likely to amount to something pretty similar to what you'd get through Piety. Which you prefer is largely that - a preference.
