Because in most places, yellow doesn't have much of a presence. Also, what are your thoughts on sniping gyms. As in taking a gym for your own team even though your team didn't defeat the gym. Is it "stealing" and should be frowned upon?

That's not how it works, all those "color psychology" infographics are full of shit. A person's perception of color depends heavily on cultural upbringing and personal biases that are impossible to quantify.
This has to do with sociology and the human need to identify as part of a group - "us vs them," etc.
