Well, you could play games supporting play-by-e-mail format (common among wargames such as Dominions or War in the East) with carrier pigeons if need be. And generally, any turn-based games, be it Civilization or Divinity: Original Sin or whatever, should be fine no matter how shit your connection is.

rts games play on any ping, and anything turn based, for obvious reasons.
Pretty much anything where the multiplayer is database-reliant.
No Man's Sky won't have actual multiplayer, it will have a connected online world that is updated with player creations, so you could play that upon release.
You could play Spore, which does something very similar.
You could play turn based RPG virtual boardgames with others online.
You could play Civilization since that's also turn based with others.
