ORAS has way more legendaries to catch, though, so it might be more of your cup of tea.

XY win out on sheer number, but BW2 have more actually challenging pokemon to catch.
Pokemon Platinum has a regional dex of 210
Pokemon BW2 has a regional dex of 300
Pokemon XY has a regional dex of 454
So theoretically XY have the most Pokemon available, but all the numbers will be a little lower due to event legendaries, starters and version exclusives (NA for Pt) and trade evo mons if you only have one DS and copy of the game.
It depends on which Generation you wanna play but those are best for volume.
Honourable mention to Emerald and Heartgold/Soulsilver for being great games of their gen but aren't as robust for Pokemon choice as the others.

Regional dex isn't the best metric, though, as there are plenty of post-E4 Pokemon to catch in HGSS that aren't in the Regional dex. Same could be said for ORAS, BW2 (to an extent), and XY (mainly through friend safari).
If you want my opinion, go with ORAS or BW2. Catching Pokemon is the most fun in those two games, because of Dexnav for the former and rustling grass/dust clouds/shadows in the latter.

That being said, if you're a genwuner it's important tot remember that you were more than satisfied with 150 Pokemon back then.
If you have 400 or 500 Pokemon in your latest romp, will it really matter?
