Dark Souls 1 is my favorite all around and the one I'm most likely to replay.
The thing about Dark Souls 2 is that it has it's own share of issues like a more muted color palette. Anyone says it's a bad game is talking out of their ass, it's just a good game with flaws (DS1 had flaws too but I didn't mind them). Scholar of the First Sin also fixed a fair amount of the major nitpicks too just by having better enemy placement and interesting DLC areas.
3 has the most advanced gameplay but a different set of flaws and removed some of the actually good things from 2.
But all 3 are good games so you're fine no matter how you go, but I recommend you play 1 before 3 at least since 3 has a ton of references to 1.

When you play DaS2 after DaS1 your first few hours are going to be fucking brutal. Everything is going to feel cheap and OP. You have to switch up your style. Eventually you'll git gud and think that DaS1 was actually a cake walk. It's a good game. A lot of the posts online about how it's bad are from when it first dropped and people were mad that it wasn't just a continuation of DaS1.

Combat isn't too bad when you learn to sidestep dodge etc.
The whole thing is a memory game. Each mob has a specific attack pattern, you need to learn when to dodge and counter attack.
So for instance the rotfiends will take 3 hits, then dodge your attack and follow up with 2 'leap' attacks. So you hit 3 times, pre-emptively dodge twice, and then continue hitting.
It's kinda fun.

I bought and am enjoying Lakeview Cabin Collection. It's a pixel/indie and I know that's a turnoff (I agree the vast majority of these blow) but if you like Friday the 13th (the original one), Texas Chainsaw Massacre, Halloween, and Alien, then it's worth at least checking out. There's also some smaller references to Nightmare on Elm St., Hellraiser, Jason X, and probably others. Shit's kinda hard too (I made it a point not to look at any guides), I managed to beat part III and IV but am pretty stuck on V for days. Anyway, if you like old horror movies from the 70's-80's, check it out.

BUY STEAMWORLD DIG AND STEAMWORLD HEIST. Steamworld Dig is an autistic collectathon and Steamworld Heist is a heist game with XCOM style movement and Worms type aiming. Cover exists but it doesn't give you any stat buffs, it just absorbs bullets. There is no permadeath to your characters, just an XP penalty to those that die and a cash penalty if you lose everyone. A lot of levels have reinforcement alarms that force you to move as quickly as possible though.

A very cozy medieval rpg with tactical turn based combat in an extra arena (kinda like Heroes of MM).
Instead of stacks of soldiers/monsters you have only a few dudes and you can equip each of them and level them up on different paths.
It does an awesome job to portrait a (fictional) medieval Germany. The story gets very interesting after you discover a few things. It also is quite challenging and you have to read quest texts and listen to rumors and hints to figure out what to actually do.
I liked it alot. The devs are awesome too.
