As someone who played in one of those pre-release tournaments it's because those setups are usually run either in a tournament format or a winner stays on style, so people have an incentive to pick characters they're familiar with and try to win to stay on. Also generally because people often want to try out their 'mains' and see what changes happened to them and may not actually be interested in trying the new ones.
Generally there's casual setups off the stream that people experiment on but that isn't the one you guys usually see.

Iori is the Ryu of KoF and to be frank if you can't play Iori you can't really play KoF. He's so central to the metagame of so many games you basically need to know how to play him.
He also is one of the characters that best embodies how KoF plays without extra silly frills added.
Honestly though most 'normal' characters are fine. Kyo/Iori/Terry/Robert are all fine choices as are many more.

Ryu hates spiders and has no social skills, Ryo takes himself too seriously and listens to Country music. There's nothing wrong with trying to please the people who will continuously support your game, but SFV couldn't even do that right. It still has controller support problems, no punishment for rage quitters, inability for P2 to select rematch option, not to mention 8 frames of delay. Instead of creating something that everyone can enjoy, they ended up upsetting everyone. I like SFV and I can still say that.
