The best way of going around it would be reading the novels because of the plot and then watching the movies if you want to put voices to the characters or see some certain things animated.

The Hakuno that died was brought back, along with everyone else, and their memories were sealed. There is an ending where you can get with Tamamo in the end. Because of the new chances available within the far side of the Moon, you can increase your bond with your servant by completing their secret garden, which will cause them to go out of their way and do everything they can to stop the Mooncell from deleting you when the situation arises again. And in this case Tamamo instead of sitting and twiddling her thumbs this time around summons her other tails and stops the Mooncell to save you, which proves she could have done something the first time around, but then again summoning her tails created a chaos far worse than even BB to fall upon them afterwards.
The true ending is not a bad ending, you didn't kill your servant or betray them to get with Sakura, or whatever gets spread around. The servant knew they were already dead since the plot started here, they were happy for you, and kept the fact that they couldn't come with you until the end since they knew you wouldn't be able to move on if you knew the truth. They moved on into the light so you wouldn't see them be deleted, and told you to be happy after having finally saved you. They were all happy in that end because they won, and you finally lived.

Achilles is confirmed in Apocrypha data-book, and most likely Ajax. People underestimate this class, but if you can block someone's NP then they're pretty much fucked most of the time, unless its a very low cost NP. Mashu so far has beaten almost everyone within the canon of FGO.

She was in the original data-books. They talked about the concept of shielder in the original CM, and how she was supposed to be Saber's rival. She was going to be a servant that was left over from the fourth war that survived by eating people. After awhile most of her role was taken over by Gilgamesh when his character shifted.
Nasu didn't say "I thought of this earlier", he didn't even reference that it was already there. Rather old fans of the series already knew that shielder was always in the original materials, and got excited when they heard she was finally in Grand Order. Before Mashu's identity was revealed people speculated for the longest whether her identity was Ajax, and that's where Archer got the shield from since she was originally from F/SN and that was a discarded idea. Of course that turned out to just be a fanon theory.
