I've found this depends a lot on how you approach the game.
X-2 doesn't work as a mainline FF, but it doesn't have to be one. It's a self-parody mission pack with fanservice and good combat. As that, I liked it.

It's not really great and not really bad, just fine. The Gambit system was a nice idea but took the gameplay out of your hand by the end of the game.
The licensing board is fine as a progression system, the only thing that is really bad about it is the placement of some panels.

In the first town, everything in the town is behind a dark aeon when you return. The same is true for I think macalania temple (if you still need the destruction sphere there) (dark shiva), and it's true for one of Tidus celestial weapon items, in Zanarkand (dark bahamut, fucknope, GET IT WHEN YOU'RE THERE).

You don't need to grind at all. It's entirely possible to complete the game without using the sphere grid at all unless you want to defeat the optional superbosses, just with creative use of Overdrives and weapon/armour creation you can shit on everything, and Spheres become abundant as you go through the game.

If you're looking to just beat the game, no. You can grind, and you'll pretty much always have the spheres you need for it, but you don't really have to. Enemy difficulty is reasonably balanced, and specific activation spheres can be gained with skill usage.
If you want to take on the superbosses, prepare for massive grinding. But there's some tricks to avoid the level/activation sphere part of the grinding, or at least making it very minor compared to the real grinding.

It's a dozen or so bossfights. Only one of them is really a problem, and even then only if you fuck up the prefight segment.

The International content is entirely the dark aeons. Unless you make Yojimbo your best friend you're going to be in the monster arena getting mad levels while you remake your entire sphere grid to min/max yourself like never before. Only then will your party be strong enough to kill all the dark aeons and then Penance. But in the end you'll only need Tidus/Rikku/Wakka.

Because zanmato 1HKO's everything in the game, but he's a jew and charges you for it. There's a complex algorithm that goes into determining what attack he does and because of it there's a way to get him to use zanmato for 1 gil every time, but it involves so much save scumming that it's easier to just grind out to min/max.

Yojimbo has a hidden stat which is his friendship with you. The higher, the more likely he is to use zanmatou for cheap. It gets raised by paying him well and him using good attacks.
Monster farm... well, first, complete it, 10 of all. You can get activation spheres from that one ugly dragon, 40 at a time for an overkill, just skill hit him. don tonberry has a very strong counter, so using overdrive->exp, the overdrive that fills when your friends get hit, tripleexp and autophoenix means lots and lots of exp.
