DS ones are easily emulable and have good tracks, my personal favorite is Meccha Taiko. I'm not sure how good the PS2 and Wii games run though.

The best to play? The five Wii Taiko games with Ishiiruka Dolphin emulator.
In terms of most songs? The PSP game. Inferior in terms of audio/video lag to the Wii, but has about 200 songs in it.

It comes down to your personal preferences. Of the ones I've played my favorites are Meccha Taiko no Tatsujin, the second one for wii and anime matsuri for ps2.
