Too bad, since I want to get this game. Never got EU4 or their other ones. Couldn't get interested due to how bland it seemed to just stare at a map that changes colors while you click through menus. But this games seems like a good mix of keeping the complexity while being more visually interesting and less fully menu-based.
I hope it'll be fun, as my only other hope on the horizon for a fun space 4X looks like Endless Space 2, and ES1 was just decent so my hopes aren't soaring too high.

Endless Space is a very simplist, sterile game imo, even by space strategy standards.
There are similarities, but this will be more complex than what you are used to. The vurve in to the more difficult stuff should be pretty easy on you though.

For Crusader Kings II there were entire other games that you could mod in, for instance: The Game of Thrones mod. The GOT mod added all of the GOT world with multiple start dates, dragons and a whole host of other stuff.

Most of that is skins, music or portraits. Theres only like 6 expansions and most are shit. Its the same thing with EU4. Most of the good shit comes in free patches, with most of the actual content being quality of life stuff. Which is acutally really fucking annoying.
One example is the Art of War expansion for EUIV. You need the entire DLC to make premade army templates. This can make it a hassle when you want to just go to unit cap.
Most of the DLC is decent, but the recent CK2 DLC is garbage tier 'rehashing EU4 systems in CK2 for no real reason' shit. The DLC that acutally adds good stuff are usually slightly overpriced as well.

I have been playing Tales of Symphonia before Stellaris but before that I played Knights of Pen and Paper, before the I got Enter the Gungeon (sunk 35 hours into it) and before that I played Orcs must Die 1 & 2 which had been in my steam library since 2013 unplayed.

I would argue its not really relative to the two. It does use the Victoria II Micromangement nerf with the sector system, but its much less complex then in Victoria. Which means it will probably work better.
Graphically, the game is way beyond those two. EU IV and Victoria were both primarily animated board games with lots of different pieces. This one is far more interactive. Its layout and combat is much more like Civilization then it is EU IV, though far far more complex in the variety of weapons and strategies that can be employed.
Relative to Civilization V and EU IV, I would say it trends closer to Civ V in its combat and economic mechanics. And is more like EU IV in its diplomacy and society mechanics.

Some people seem to think this game will be fucking ultra hard to figure out, nearing EU4/CK2 tiers of difficulty, it isn't. Economy is classic Civ V. Different tiles (Planets) are good for certain things. Build relevant infrastructure on said tile to gain benefits. While you "can" build a mine on flat land next to a river, why would you? Build a farm on that tile and put your mine in the mountains. Same thing in Stellaris.
Comabt is "like" Civ V's, but far far more complex. Its got the standard Civ V Rock, Paper, Scissors mechanic, but then adds in EU IV combat mechanics for good leadership of the forces, Hearts of Iron mechanics for add on items to units, and so on to the RNG rolls. So instead of simple Spears Beat Cavalry, your Cavalry could be equipped with anti-spear armor and lead by a General who hates spear wielding people with a fiery passion.

The Ethoses you choose (Militarist, Spiritualist, Xenophobic, etc etc) will effect government types, events, event text on certain events, ethos-specific technology, diplomacy, and available policies and edicts.
Like say, a Pacifist or Xenophobic empire couldn't order full orbital bombardments to wipe out enemy populations, for instance.
The biological traits will effect less, but will do stuff with some events. Oh, and Xenophobic races will hate you less if you're the same "kind" of race, like Mammalian, Fungoid, Avian, etc etc.
