They were considered a legend on most planets outside of the republic and even most citizens probably barely had much to do with them. Why bring a star fighter that is has been obsolete for nearly 50 year (by the time of ANH it was already considered obsolete) when the T-70 X-Wing can do everything the Y-Wing could do, and a lot of the things it can do better.
The X-Wing is faster, more maneuverable, and thanks to the update T-70 it is entirely possible that the T-70 had equal or better armor/shields and it definitely had equal or more warheads.

The First Order is a tiny fraction of what the Empire was.
One year after Endor the Empire and Rebels fought the battle of Jakku. The Empire lost their last SSD and got beat so hard they were done as a fighting force. They were forced to sign the space treaty of Versailles.
They had to pay reparations and were forced to demilitarizes. The Empire withered away and died off. The First Order broke off from it and retreated away and began to rebuild. First rearming in secret and shit. Also the Republic didn't consider them much of a threat and ignored things so that's why the Resistance came about.

Star Wars Writers instead think a little over a million stormtroopers were be enough to fight a war on a galactic scale. ww2 cost the lives of around 21 million soldiers and 33million civilians.

The series is well known for using arcane magic and ancient curses to run. It was only recently that Rogue Squadron 2 and 3 got working on emulators and my understanding is that it's still not well. Fuck I dont even know why the Rebellion uses starfighters anymore. Just get a few CR-90 Corvettes, put a handful of those super lasers on it and laugh and you pulverize entire fleets but never even get in danger. The extra power supply of the corvette would mean the hyperdrive is fine.
