I disagree, it took me back to a time when girls in school would send me lewds. Real girls give fan service and relationship are more than just walls of text and dialogue. The interactivity of PK made me more invested in the girls and filled time. Every photo is a memory and every minute taking photos made me love them more. Amagami is better in terms of writing but I loved the PK girls more. The progression of trust in the relationship in PK is more apparent and concrete girls wont walk home with you, run away if you are too lewd, wont let you take photos, slowly they trust you, and you can take pictures, then they pose for you, then they let you take lewds and even talk dirty at times. I don't think I've played enough of them to give you an answer that would be reflective of the genre. I've just happened to have played several of these games.
Genre differences are kinda tricky to qualify but in my opinion, dating sims are different from romance visual novels when there is a dimension of time management involved in the game, and events that can only be unlocked or seen in a certain time. They also need to have a more complex conversational system involved that doesn't rely on branching solely, and should have a way for your actions during that time to build up. So, say, you need to pick 3 choices in a row where you have 4 options to choose each time you get to pick. A visual novel would save your choices and then choose something to show you based upon that. A dating sim would see your choices and quantify them in some sort of way like a love meter or hearts or whatever, where it's kind of a slower buildup.

You probably didn't read up on the restructuring and all that with Kadokawa, but they basically took all the game divisions of their subsidiaries, Enterbrain included, and merged them together into a single department in the company, which is Kadokawa's game development department.
So most of these games are now purely Kadokawa and Enterbrain only publishes magazines. Which is kind of why I didn't like the somewhat radical departure from Kimikiss/Amagami aesthetics with Photokano. I'm not saying you can't like them but they are clearly different.
And yes, I think the version bullshit is purely for $$$. They have enough space and everything to fit it into 1 memory card if they wanted to. Can't wait for the Ebikore/Kiss edition to merge both games into 1.

I think that type of immersion is difficult for me to get and it's why I'm kind of off put by Love Plus similarly. It's in a uncanny valley type thing where it's not realistic enough to remind me of what it reminds you of and the investment, but it seems worse because of that.

In a way, you kind of described it but it's really not even that. I feel like dating sims are in a great middle ground but more and more people have been either going to the extremes of oversimplying the genre with visual novels, or trying to get as realistic as possible, such as with Artificial Academy.
Since visual novels are cheaper to churn out than full blown simulator games, it's pretty much the rage these days, and since dating sims can't simplify, they have to head towards the other side of the spectrum torwards realism, which is somewhat sad for me since I can not enjoy these games as much.

There are still lots of games like that. The most recent one I bought was the new To-love-ru vn, where you have to manage your own constitution and the girls love parameters. Or Infinite Startos where girls have a stress and a love gauge which you need to manage without triggering too many ignition events or you get a game over. There are several that release each year, it's not like amagami was the end all be all dating sim/VN is what I am saying. I get not liking the photo stuff, but I would rather have that than just have the game be the other dating sim with "realistic" cute girls.
